No, it’s not fruit cake. It’s coconut.
It even looks like Christmas. All that snow. I still have the Snow song from White Christmas stuck in my head.

It has a classic cream cheese and butter frosting that tastes so good I make 1/3 more than the recipe calls for and frost three layers instead of the suggested two.
