If you love the taste of lime, you’ll love this sweet and tart cake. It comes from Trisha Yearwood’s recipe collection. It’s a pretty cake and it’s perfect for spring or summer. There are several ingredients which may make this recipe look complicated, but it’s really easy!
Key Lime Cake
Cake Ingredients:
1 3 oz package lime-flavored gelatin
2 cups sifted cake flour
½ tsp salt
1 tsp baking soda
5 large eggs, beaten with a fork
1 ½ cups vegetable oil
¾ cup orange juice
1 Tbsp lemon juice
½ tsp vanilla
Lime Glaze Ingredients:
½ cup Key Lime juice or juice from 25 key limes or 4 large limes
½ cup confectioner’s sugar
Icing Ingredients:
1 stick butter at room temp.
1 8 oz. cream cheese at room temp.
1 box confectioner’s sugar
Mix together the gelatin, sugar, flour, salt, baking soda, and baking powder. Add the eggs, oil, orange juice, and vanilla. Divide the batter evenly and pour into three buttered and floured round cake pans. Bake at 350 for 30-40 minutes until a knife or toothpick comes out clean.
Turn out the cakes on a cooling rack. Mix the lime juice and ½ cup of confectioner’s sugar together and pour over the still hot cake layers. Poke the cakes with a toothpick and allow the glaze to fill the holes.
Mix together the butter, cream cheese, and box of confectioner’s sugar and spread on completely cooled cake layers.
