Life has been crazy lately and I have been way off my posting schedule. This recipe is perfect for those crazy busy nights.
Cheeseburger Pie is a favorite go-to meal in my house because I always have the ingredients on hand and it’s a real family pleaser. I originally found this recipe on the back of a box of Bisquick, but I haven’t seen it in a while. Enjoy!
Cheeseburger Pie
1 lb of ground beef
1/3 cup diced onion
1/4 cup diced green pepper
1 cup of grated cheddar cheese
salt to taste
2 eggs
1 cup of pancake or biscuit mix or Bisquick
1/2 cup of whole milk
In a skillet, brown the beef. Halfway through the browning, toss in the onion and green pepper. Drain the any grease, and place the browned meat in a pie dish. Sprinkle with salt. Spread the cheese on top. By hand, mix together the pancake mix, milk, and eggs until there are no lumps. Pour on top of the cheese. Bake for 30-35 minutes at 350 degrees. Enjoy!
